cooking steaks tonight [Aug. 3rd, 2009|05:51 pm]
They went in the Jack Daniel's mesquite marinade around noon. I'll pull them out about 20-25 minutes before cooking to come to room temp. Into a hot cast-iron skillet (w/ a little peanut oil) for 30 seconds a side, and then straight into a pre-heated 500 degree oven for 2.5-4 minutes a side (depending on preferred doneness). The a rest on top of an bowl inverted over a larger plate and covered with aluminum foil for at least 5 minutes to let the juices redistribute.

I may be in a steak-induced coma later. It's probably a good thing I don't do this more often.

I get to drive to dinner tonight! On the wrong side of the road! Chris didn't even fight me for it (I think he wants to sleep). And the place we're going feeds sharks for the dinner show. I'll let you know if we make it back later.

I'm not sure why I jolted awake this morning at 7 AM. I mean, it's not like I'd had my 8 hours yet. Anyway, I'm just praying it doesn't happen again. Or maybe that I've gone to bed earlier when it does.

Now I'm off to get ready for and go to church. Only 10 more days until I'm in the Bahamas! And Chris might go with me if he gets his passport back in time.... :-)

I always want it but what made you want it?

me: Dexter. a friend of his was in the hospital and talking about how she wants a key lime pie

me: he brings her the supposed 'best' from Key Largo, but it's green. and then she says it wasn't made with sweetened condensed milk and says 'all natural'. She's like, that's great, but they didn't have fresh milk in the keys. they had to use sweetened condensed and this wasn't the real thing
and I found myself nodding in total agreement

I'm totally going to make one (or two) soon. It's been entirely too long since I have. I know it's not traditional Easter fare, but I think it'll do.

Maybe I'll sleep better tonight. [Feb. 9th, 2009|07:49 pm]
I must not have slept well last night, because I was so tired all day today. The poor kids got the worst of it, I think. But they weren't having such a great day either. At least only 9 of them were there today. I'm not sure what it would've been like with all 12.
I'm determined that tomorrow will be a much better day. I have lunch bunch, so I'll be working a little later than normal (though I still work short days). I'm working with one other teacher that I really like, and we've only got 8 kids on tomorrow's roster, so that will be easy.

And I would like to say that the groundhog was possibly quite mistaken. The weather here has been BEAUTIFUL for the last few days. Mom and I went to an equestrian event Saturday and I could have just stayed out there all day long. Sunday and today were quite nice, too. I should have taken better advantage of it by riding my bike, but I took a nap today. Maybe I'll go ride in a few minutes. I've decided to ride for at least 30 minutes (hopefully an hour, though) a day for 5 days a week. When I get to feeling like that's not long enough, I'll up it. So probably in about 10 days or so. Chris and I are going to the Bahamas in May and I want to be ready. Besides, I'm seriously out of shape, so I'm also stretching and doing a little bit of weight lifting.

In a month from today, I'll be in DC again! I'll be there from Monday afternoon through Friday night. The last time I went was with band in 2005, and that was not a long trip. I'm so excited. I love sight-seeing up there and I'm going to see some old friends (from high school - Sunday and possibly Renee, and college - Jason) who live there now. And eat Moroccan food. I'm paying for the flight and food and travel while I'm there. My mother-in-law is going up for business, so she's covering the room and some tours, and possibly a meal or two. I'm still not sure what tours, but I think she's planning on a White House tour, which is kind of neat, because in my 4 trips up there, I've never done that. I'm not sure what else right now, though, because my MIL has been busy lately. I just hope these next few weeks fly. The days are already going too slow.

Now I think I will go for a ride.

I just got an email from honey-baked ham. They want me to buy a 3 lb. boneless ham for 25 bucks. I laughed. I'll probably never buy one again. But if I happen to run into one somewhere....I wouldn't say no.

Scripture Memory [Jan. 15th, 2009|10:46 pm]

So I'm participating in Beth Moore's Scripture memory challenge, I guess. Two to memorize each month. For Jan. 1-14, I memorized:

"Blessed is the man who walks not in the counsel of the wicked, nor stands in the way of sinners, nor sits in the seat of scoffers. But his delight is in the law of the LORD, and on his law he meditates day and night." Psalm 1:1-2 ESV

It took almost the whole time to memorize it, and I didn't quite devote as much time to it as I feel I should have. Hopefully, I'll do better from the 15th through the end of the month. Here's my new verse (so you can keep me accountable).

"For 'everyone who calls on the name of the Lord will be saved.' How then will they call on him in whom they have not believed? And how are they to believe in him of whom they have never heard? And how are they to hear without someone preaching? And how are they to preach unless they are sent? As it is written, 'How beautiful are the feet of those who preach the good news!'" Romans 10:13-15 ESV

And for a quick update - things are still going well. I'm still teaching in the preschool and I love my coworkers and the kids. Such a better work environment than the University was. Chris will soon get started with the webpages he's been hired to design, and he may have more jobs coming. Yay for freelance work. Castle Crashers is seriously addicting!!! I love that game. And Hexic. I may be coming down with a cold (though I sure hope not). Nothing much else to report right now. Hope all of you are doing well.
